Today’s 5 star secret recipe comes from The Rooftop by JG in Beverly Hills, California.  The Rooftop is chef Jean-Georges all-day eatery with New American fare located on the Waldorf Astoria rooftop.  They serve a delicious hummus that’s made with fresh chickpeas.  The dip, made with the vibrant beans, is flavored with garlic, lemon, fresh mint and a touch of jalapeno, and served with pita bread or a assortment of crudité including cucumbers, baby turnips, radishes and rainbow carrots. It’s a perfect dish to celebrate the colorful bounty of spring.

Today’s 5 star secret recipe comes from Watercolour Grillhouse in Clearwater Beach, Florida.  This romantic, waterfront restaurant features a diverse menu from steaks to sandwiches.  One of their wonderful dishes is the crab cakes.

Generously portioned, lump crab meat is flavored with fresh chives and cilantro along with a bit of Old Bay seasoning, the cakes dredged in panko bread crumbs and pan-fried. The cakes are served over a colorful bed of vegetables and topped with a bright Key lime mustard sauce.  The tangy sauce really enhances the flavor of the crab.

Rice Pudding

3 cups milk
1/2 cup rice
3 egg yolks
3 tablespoons sugar
salt, to taste
1 teaspoon vanilla
3 egg whites
powdered sugar

To three cups of milk, add half a cup of rice, which you have previously scalded with hot water. Boil in a double boiler until quite soft.

2 cups Lettuce Romaine, Spinach, Iceberg
1/4 cup corn
1/2 cup grape tomatoes
1/4 cup cheddar cheese shredded
3 slices red onion
1 scallion, sliced
1 barbecued chicken breast sliced
1/3 cup Santa Fe-style crunchy tortilla strips

Dressing:
2 tablespoons barbecue sauce
2 tablespoons ranch dressing

Layer the lettuce, corn, tomatoes, cheese, onion, scallion and chicken on a plate.

Mix barbecue sauce and ranch dressing in a small bowl.  Drizzle over the top of your salad.

Sprinkle with Santa Fe tortilla strips.

Luna Park’s Asparagus Soup

Soup:

1/2 onion, chopped
1 large baking potato, peeled and chopped
1 tablespoon butter or oil
2 1/2 bunches asparagus, cut diagonally in pieces, about 2 1/2 pounds
Water
1 bunch spinach, stemmed, about 1 pound
Salt, pepper
1 teaspoon to 1 tablespoon vinegar, optional
Fried asparagus, for garnish
3 tablespoons chopped Italian parsley, for garnish

Saute onion and potato in butter in large saucepan over medium heat until onion is soft, 6 to 8 minutes. Add asparagus and saute until bright green in color, 3 to 4 minutes. Add enough water to reach level of 1/2- to 1 inch above asparagus. Bring to boil and simmer 20 minutes.

1 cup butter, softened
1 ½ cups light brown sugar, packed
½ cup granulated sugar
2 eggs
1 tsp. vanilla extract
1 ¾ cups flour
1 tsp. baking soda
½ tsp. salt

3 cups rolled oats

For the filling:
12 oz. cream cheese, at room temperature
1/2 cup honey

Bluewater Grill’s Chicken Chopped Salad

Avocado dressing:

1/3 cup lime juice
2 teaspoons Champagne vinegar
3/4 teaspoon chopped garlic
1/3 bunch (about 15 sprigs) cilantro, chopped
1/3 bunch (4 to 6) green onions, green tops only, chopped
1 teaspoon kosher salt
Pinch cayenne pepper
1/3 avocado, diced
1/3 cup extra-virgin olive oil
1 cup canola oil

In the bowl of a blender, combine the lime juice, vinegar, garlic, cilantro, green onion, salt, cayenne pepper and avocado and blend. With the blender running, slowly add the oils to form a thick, creamy dressing. Taste and adjust the flavorings, and seasoning if desired. This makes a scant 2 cups avocado dressing, which will keep, covered and refrigerated, up to 3 days.

2 cups medium shell pasta, uncooked
2 1/2 cups milk
1/2 teaspoon salt
1/4 teaspoon Dijon style mustard
1 tablespoon butter
1 cup grated sharp white cheddar cheese (4 ounces)
1 tablespoon chopped parsley

In a four-quart non-stick saucepan over medium high heat, place dry pasta, milk, salt, and mustard.

Bring to a simmer, stirring frequently over medium low heat until pasta is cooked and sauce has thickened, (about 20-30 minutes).

Remove pan from the heat and stir in the butter and cheese. Garnish with parsley and serve immediately.

Today I have a secret recipe for a tasty shareable appetizer served at Outback Steakhouse.  If you enjoy cheesy fries, then the Aussie cheese fries are just for you.  Crispy fries are topped with melted Monterey Jack, Cheddar and chopped bacon.  Serve this with ranch dressing on the side.  I recommend making the fried with an air fryer if you have one, otherwise baking them still produces great results.

¾ bag of Ore Ida Simply Country Style Fries
¾ cup shredded Monterey Jack & Cheddar cheese
4 slices bacon
2 green onions, chopped
½ cup to 1 cup good-quality Ranch dressing from the refrigerated produce section
salt and pepper

Heat oven to 425 degrees F.

Spread fries onto baking sheet. Bake according to package directions.

Cook bacon until crispy in skillet, drain on paper towel, and chop.

Upper West’s Veggie Burger

Tomato aioli:

2 1/2 teaspoons fresh thyme
1 tablespoon plus 1 3/4 teaspoons dried oregano
1 teaspoon extra-virgin olive oil
2 tomatoes, halved lengthwise
1 1/4 teaspoons liquid smoke
1 1/2 cups mayonnaise
Salt, to taste

In a large bowl, mix together the thyme, oregano and oil. Add the tomatoes and toss to combine. Heat a grill (or grill pan) over medium-high heat until hot. Grill the tomatoes until softened, about 4 to 5 minutes depending on the heat. Remove the tomatoes to a blender and pulse until smooth. My local supermarket had an amazing sale this week on jumbo shrimp which is perfect for today’s secret recipe.  At Bonefish Grill they serve a delicious saucy shrimp appetizer.  Sautéed shrimp in a creamy lime, tomato, garlic sauce with kalamata olives and topped with feta cheese.  This dish combines so many vibrant flavors.  You could easily turn this into an entree by serving it with pasta or rice.

6 cloves garlic minced

3/4 cup clam juice
